- 1 cup quinoa, well rinsed
- 1 1/2 cups water
- 2 cups cooked broccoli, (I used one Steamfresh microwave bag)
- 1 cup cheddar, shredded
- salt and pepper to taste
- Bring the quinoa to boil over medium heat, reduce the heat and simmer covered until the water has been absorbed and the quinoa is tender,about 13-17 minutes.
- Mix in the cheese and broccoli, let the cheese melt then season with salt and pepper
