A few years ago after I started working with the awesome people at ACAC in Charlottesville, one of my coworkers let me try her pumpkin dip with apples. It was sooooooooo good I couldn't stand it! So she made me some after I begged and begged and then brought it to work. I then forgot about it in the community fridge and she has never let me hear the end of it! Hahha. I felt really bad about it and desperately tried to get the recipe from her but she wouldn't let me have it since I let her hard work the last time go to waste. I have been searching and searching to try to get the right combination of ingredients and amounts to replicate it. Its been so long now Im not sure if this tastes like hers, but this one is SOOOO GOOD!!! It will make you seriously upset when you run out of apples!!
- Ingredients:
- 3/4 cup (6 ounces) 1/3-less-fat cream cheese
- 1/2 cup packed brown sugar
- 1/2 cup canned pumpkin
- 2 teaspoons maple syrup
- 1/2 teaspoon ground cinnamon
- 24 apple slices
- Place first 3 ingredients in a blender and mix until well blended. Add syrup and cinnamon and blend until smooth. Cover and chill for 30 minutes. I like yellow apples, but Im sure its good with red too!! Adapted from Cooking LIght, October 2003
